At Flying Dolly’s, we believe a great dessert should be more than just something sweet. From the texture of our shaved ice to how we make our ice cream, bake our cookies, prepare our waffle cones, and develop new flavors, we put a tremendous amount of thought into what eventually ends up in your hands.

It Starts With Our Ice Cream
Ice cream has been part of the Flying Dolly’s story since we opened our first location in Mandeville, Louisiana, in 2011.
But we didn't always make it ourselves.
During our first few years in business, we purchased ice cream from outside suppliers. We eventually decided that if ice cream was going to be an important part of Flying Dolly's, we wanted more control over the quality, flavors, and experience we gave our customers.
So in 2014, we began producing our own ice cream.
That required developing recipes, testing flavors, making adjustments, and learning what our customers loved.
It was more work.
It was also worth it.
Today, premium ice cream remains an important part of the Flying Dolly’s experience and gives us the opportunity to create flavors that complement the rest of our menu.
What Makes Flying Dolly’s Snoball Ice Different?
If you've never had a true Louisiana-style snoball, the first thing you may notice is the ice.
It isn't supposed to be crunchy.
At Flying Dolly's, we want our shaved ice to be extremely fine, soft and fluffy. We often describe it as powder-fine.
Why does that matter?
Because the texture of the ice changes the entire snoball.
Coarse or crushed ice leaves larger pieces that you have to crunch. Finely shaved ice creates a softer texture and allows flavored syrup to work its way throughout the snoball.
The result should be something you can easily eat with a spoon from the first bite to the last.
It's one of those details that might seem small—until you've experienced the difference.
Then There's the Stuffed Snoball
This is where two sides of Flying Dolly's come together.
A stuffed snoball combines Louisiana-style shaved ice and flavored syrup with ice cream hidden inside.
You begin eating what looks like a traditional snoball, and as you work your way toward the middle, you reach the creamy ice cream center.
Eventually, the ice cream, syrup and shaved ice begin mixing together.
It's refreshing, creamy and completely customizable depending on the flavors you choose.
Stuffed snoballs have become one of the products that best represents Flying Dolly's because they bring together two things we're passionate about: great snoballs and premium ice cream.
Cookies Deserve Attention, Too
Not everything at Flying Dolly's is frozen.
Our cookies are another important part of what we do, and we're particular about how they're prepared.
Cookies should have the right texture and consistency, which means details such as preparation, spacing, baking time, cooling and handling all matter.
And, of course, once you have great cookies and great ice cream under the same roof, there's an obvious next step:

How Does Flying Dolly’s Create New Ice Cream Flavors?
One of the most enjoyable parts of making our own ice cream is experimenting with flavors.
Some flavors are classics for a reason.
Others start with an idea:
What would happen if we tried this?
Creating a new flavor involves more than adding ingredients to ice cream. We have to think about sweetness, texture, mix-ins, consistency, how ingredients work together, and—most importantly—whether people will actually want another scoop.
That's where testing comes in.
Recipes can be adjusted and refined until we're happy with the final product.
And sometimes a flavor is intentionally temporary.
Why Flying Dolly’s Offers Limited-Time Flavors
Limited-time flavors give us an opportunity to have a little fun.
They allow us to experiment with new combinations, introduce seasonal flavors and give regular customers another reason to see what's new.
Over the years, that has meant flavors and combinations ranging from familiar favorites to more creative creations.
Some may stay for a limited time.
Some may disappear and return later.
And every once in a while, a flavor becomes so popular that customers don't want us to take it away.

As Flying Dolly's has grown from our original Louisiana store into communities across Louisiana, Mississippi and Alabama, consistency has become increasingly important to us.

That means paying attention to the little things:
The texture of the shaved ice.
The amount of syrup.
The portion of ice cream.
The appearance of the finished product.
The way it's handed to the customer.
